
Here's what you'll need:
1 small onion, diced
3 cloves garlic, minced
3 stalks of celery, chopped - You can chop them as small as you like or even eliminate this.
Avocado Oil (or olive oil / any kind of cooking oil)
Seasonings - I don't measure! I used chili seasonings (chili powder, paprika, garlic powder, onion powder, oregano...) Salt & Pepper.
Tomato paste - About 2-3 tbsp. Again, I don't measure!
Vegetable broth - About 2-3 cups...Give or take.
3 cans of beans - I used black, kidney, and chickpeas.
Optional - Freshly chopped cilantro!
What to do:
Add some oil to a large cooking pot. Heat on medium heat.
Add onions, celery, and garlic. Sautee for about 5 minutes.
Season the veggies.
Add the tomato paste and mix until totally blended w/ veggies.
Add chicken broth - just enough to almost cover the veggies
Drain & rinse beans.
Add beans to the pot.
Mix & add more chicken broth + some more seasonings!
Bring to a boil.
Turn down to a simmer and cover. Let it simmer for about 20 minutes. Keep checking on it and stir occasionally.
Add chopped cilantro and mix it in.
Serve! I added even more cilantro because I love it and it's so good for us! You could top w/ some shredded cheese!
