Chicken & Plantain Nachos




This recipe was inspired by Tostones Con Pollo from Bahama Breeze Restaurant. They are SO good. Instead of tortilla chips, you use fried plantains. 10/10 recommend.


FOR THE CHICKEN

  • 1 pound chicken breast, cut into small chunks.

  • 1/2 packet of taco seasoning

  • 1/2 lime

  • a little bit of cooking oil

Cut up your chicken into small pieces. Season with taco seasoning + lime juice and cook in a pan with some oil over medium heat. Keep stirring it every couple of minutes.


FOR THE BLACK BEANS

  • 1 can of black beans

  • 1 bell pepper (I used half a yellow and half a green) diced up.

  • 2 cloves of garlic, minced.

  • A handful of green olives, cut into 4s.

  • Other 1/2 of the taco seasoning packet

Add a can of black beans and some water (1/2 cup or so) to a pot. Chop the bell pepper, garlic, and olives and throw them in. Season with the other half of the taco packet and let it simmer. Continue stirring every couple of minutes.



FOR THE PLANTAINS

  • 3-4 green plantains

  • 1 cup cooking oil

  • Salt


Peel and slice the plantains. Heat some oil so it's very hot! Fry the plantains for a minute or so until they're lightly golden. Smash them with the bottom of a cup or a plantain smasher. Fry them once more time for another minute or so to get crispy! Season with salt.


*I wish I owned an air fryer because these would probably be SO good in the air fryer. But I don't! So I just did it the old-fashioned way. You could also probably bake the plantains to avoid having to fry them. I'll have to try that!*


I topped mine with some pepper jack cheese, red onion, tomato, and fresh cilantro & chives from my garden!
