This is by far one of my favorite recipes to cook! It's so simple and SO delicious. It's packed with protein and fiber.+ nutrient-rich spices!
INGREDIENTS:
3 chicken breasts
1 red bell pepper
1 green bell pepper
3 stalks celery
1 onion
2-3 cloves of garlic
3 cups chicken broth
1 can red kidney beans
2 tbsp. tomato paste
1 packet of chili seasoning
Oil (I used avocado oil)
Fresh cilantro (if you have!)
WHAT TO DO:
Preheat oven to 350 degrees.
Slice chicken breasts.
Season with salt and pepper.
Place chicken in a baking dish with some oil.
Bake for 25-30 minutes.
Chop veggies: bell peppers, celery, onion, & garlic.
Shred chicken apart with two forks.
Heat 1-2 tbsp. oil in a pan. Add all veggies and season with salt & pepper.
Allow veggies to cook for 5-10 minutes.
Add 2 cups of chicken broth.
Add 2 tbsp. of tomato paste and mix until it dissolves.
Add a packet of chili seasoning.
Rinse kidney beans & add to veggies.
Add shredded chicken.
Mix all together.
Put a lid on top & allow to simmer for 15-20 minutes.
Top with fresh cilantro!
Serve hot with shredded cheese & more cilantro :)
