Chicken & Veggie Chili



This is by far one of my favorite recipes to cook! It's so simple and SO delicious. It's packed with protein and fiber.+ nutrient-rich spices!


INGREDIENTS:

  • 3 chicken breasts

  • 1 red bell pepper

  • 1 green bell pepper

  • 3 stalks celery

  • 1 onion

  • 2-3 cloves of garlic

  • 3 cups chicken broth

  • 1 can red kidney beans

  • 2 tbsp. tomato paste

  • 1 packet of chili seasoning

  • Oil (I used avocado oil)

  • Fresh cilantro (if you have!)


WHAT TO DO:

  1. Preheat oven to 350 degrees.

  2. Slice chicken breasts.

  3. Season with salt and pepper.

  4. Place chicken in a baking dish with some oil.

  5. Bake for 25-30 minutes.

  6. Chop veggies: bell peppers, celery, onion, & garlic.

  7. Shred chicken apart with two forks.

  8. Heat 1-2 tbsp. oil in a pan. Add all veggies and season with salt & pepper.

  9. Allow veggies to cook for 5-10 minutes.

  10. Add 2 cups of chicken broth.

  11. Add 2 tbsp. of tomato paste and mix until it dissolves.

  12. Add a packet of chili seasoning.

  13. Rinse kidney beans & add to veggies.

  14. Add shredded chicken.

  15. Mix all together.

  16. Put a lid on top & allow to simmer for 15-20 minutes.

  17. Top with fresh cilantro!

  18. Serve hot with shredded cheese & more cilantro :)
